This recipe is great for working moms like me, or anyone for that matter! These are super easy breakfast omelet muffins that you can whip up on a Sunday afternoon and then “grab on the go” during the week! Step 1 – Spray a cupcake pan with some nonstick cooking spray Step 2 – Fill with chopped up omelet toppings of your choice, here are some ideas! Red peppers Onions Green peppers Jalapenos Mushrooms Ham Cooked Bacon Step 3 – Top with CHEESE! Step 4 – Whisk together eggs, milk, oil, salt, pepper and baking powder. To fill up all 12 cupcake holes, I used 9 eggs, ¾ cup of milk, 1.5 tsps oil, 1.5 tsps baking powder. Step 5 – Pour into each “muffin” Step 6 – Bake at 375 degrees for 20 minutes! A few weeks ago I posted some of my favorite ideas for Fall and Halloween decorating. Honestly, this is the first time that I have actually done a little decorating for the Fall season as I usually save up all my energy for CHRISTMAS, only 78 more days away!!!!  I'm totally counting!
