15 Oct 20-Minute Breakfast Omelet Muffins #recipe
This recipe is great for working moms like me, or anyone for that matter! These are super easy breakfast omelet muffins that you can whip up on a Sunday afternoon and then “grab on the go” during the week!
Step 1 – Spray a cupcake pan with some nonstick cooking spray
Step 2 – Fill with chopped up omelet toppings of your choice, here are some ideas!
- Red peppers
- Green peppers
- Cooked Bacon
Step 3 – Top with CHEESE!
Step 4 – Whisk together eggs, milk, oil, salt, pepper and baking powder. To fill up all 12 cupcake holes, I used 9 eggs, ¾ cup of milk, 1.5 tsps oil, 1.5 tsps baking powder.
Step 5 – Pour into each “muffin”
Step 6 – Bake at 375 degrees for 20 minutes!
